Well we are now officially three weeks into school! What an adjustment our family has had to make. My work schedule has changed to more late afternoon/evening shifts which we thought would work well with Aaron's work/school schedule. On paper is looked like it was going to be a smooth transition. But these few weeks have been really hard on us ( well really me!) Having Aaron gone three nights a week for school has been a shock to me. I have had to pick up more housework and things around the house to make things easier for him to study and get to class. I hope that normally this wouldn't be so hard but being pregnant has really made it seem unbearable. I miss seeing Aaron and the time that we had as a family, but we both knew that this was the road that we needed to go down for us! So I cant really complain. But on top of it, we are still trying to get the bathroom finished and our basement rearranged to accommodate for a new baby. We are down to 11 weeks.... so much to do until then.
The other thing that has been consuming alot of my time is canning. My friend and I decided that we would plant gardens with the hope that we could can some of it. Well we did not get out of it all we wanted, but we have gotten some things done already. We picked apricots from a friends tree and made fruit leather and canned the rest of the fruit! Then on Thursday we started with the first batch of tomatoes and made salsa and spaghetti sauce. And on Saturday we used some elderberries that she picked to make elderberry syrup. Now I have never canned before so this is all new to me! But I am so grateful to be learning this new skill that has really helped our food storage already. Our plans for the rest of the season are to can peaches, more salsa and pizza sauce and applesauce! So the next couple of weeks will be as busy as these! So please wish us luck!

Hang in there Kira! You are such a good mom and things will work out for you and your family. Good luck with all your canning - that is something I wish I knew how to do.
Canning is easy! and so gratifying. I've done tomatoes, green beans, salsa and now peaches all by my self the last few weeks. It's been a lot of fun learning how and what not to do! keep it up having all these things in food storage is awesome!
